General Manager – New Restaurant Opening in Milan

About the role

Dal Salumiere, a forthcoming high‑end restaurant in Milan’s design district, is seeking a charismatic General Manager to lead its opening team. You will shape the venue’s identity, culture, and commercial success from pre‑opening through long‑term growth.

Key responsibilities

• Lead the successful launch, establishing operational standards and service culture.
• Oversee day‑to‑day performance across restaurant, bar, guest experience, and events.
• Drive profitability through P&L management, budgeting, forecasting, labour control and cost optimisation.
• Recruit, develop and inspire high‑performing teams across all departments.
• Maintain exceptional guest experiences and the highest service standards.
• Manage VIP relations, reservations strategy and private event execution.
• Collaborate with owners on business strategy, positioning, partnerships and growth opportunities.
• Support marketing, brand visibility and guest engagement initiatives.
• Ensure full compliance with HACCP, health & safety and operational procedures.

Required profile

• Minimum 3 + years in a General Manager, Operations Manager or senior F&B leadership role within luxury hospitality, lifestyle restaurants, members clubs or premium nightlife.
• Proven experience in opening projects or scaling hospitality businesses.
• Strong entrepreneurial mindset with a passion for premium guest experiences.
• Excellent financial acumen and commercial vision.
