Overnight Cook

About the role

The Overnight Cook at Four Seasons Hotel Firenze is responsible for preparing and serving high‑quality food during the night shift. Working independently, you will ensure that guests and staff receive fresh, well‑presented dishes while maintaining a safe and sanitary kitchen environment.

Key responsibilities

• Prepare and serve food according to recipe cards, portion standards, and presentation guidelines.
• Start pre‑prepared items in line with estimated demand, avoiding over‑production.
• Operate, maintain, and clean a range of kitchen equipment, including deep fryers, broilers, stoves, steamers, food processors, mixers, slicers, ovens, steam tables, tilt kettles, waffle irons, and flat‑top grills.
• Label and rotate all food containers, monitor temperatures, and manage stock levels.
• Assist with food preparation for the next shift and perform kitchen and storage area cleaning duties.
• Support other kitchen stations when needed and help control food waste and cost.

Required profile

• Formal culinary education from a cooking school or culinary institute, or equivalent professional experience.
• Minimum of two years of experience working in a hotel or fine‑dining kitchen environment.
• Ability to work autonomously during overnight hours.
