Director of Food & Beverage

About the role

The Gritti Palace, a Luxury Collection hotel in Venice, is seeking a Director of Food & Beverage to lead its culinary and beverage operations. Reporting to the General Manager, you will be a key member of the Executive Committee, shaping the guest experience across restaurants, bars, in‑room dining and events.

Key responsibilities

• Develop and execute F&B strategies that align with Marriott brand standards and the property’s luxury positioning.
• Oversee all food and beverage outlets, including restaurants, bars, banquets, and in‑room dining.
• Manage budgets, forecast revenue, and drive profitability while maintaining cost controls.
• Lead, motivate and develop a multicultural team to deliver exceptional service.
• Monitor guest feedback, KPIs and quality metrics to continuously improve the offering.
• Ensure compliance with health, safety, and Marriott operational policies.

Required profile

• Fluent in Italian and English; French is a plus.
• Proven experience in 5‑star luxury hotels, preferably with Marriott standards.
• Demonstrated managerial experience with strong leadership and team‑development skills.
• Solid financial acumen and ability to manage budgets and performance metrics.
• Strategic, solution‑oriented mindset with a focus on service excellence.

Required skills

• Fluency in Italian and English.
• Knowledge of Marriott brand standards and luxury hospitality operations.
